Fairfield Hot Sauce – batch #3 the most successful yet!
Congratulations to the following students for getting busy in the kitchen creating another delicious batch of Fairfield’s infamous hot sauce: from Year 8 – Dineiro, Rex, Rupert, Keiran and Roshan, and Kayne from Year 10.
This was the third time of meeting to make Fairfield Hot Sauce (FHS.) which imitates the simple recipe of Encona: chillies, salt and vinegar.
First impressions were good – comments included lovely orange colour and increased heat from added chilli flakes, as Fairfield Hot Sauce #1 and #2 were fairly mild! Students also felt it was slightly on the sharp side, as chillies were boiled in vinegar to sterilise the sauce, with breadsticks used to sample the wares (no double dipping!). The students will then take home for family feedback on FHS #3.
Other tasting notes:
- Rupert – good heat, a little too sour. More salt?
- Kayne – needs more spice! Will bring in hotter chillies. Maybe some mango?
- Roshan – needs a little sweetness, but good heat. Add tomato?
One thing everyone agreed on is the shared love of cooking and a fiery flavoursome sauce!
The group ultimately aims to make enough hot sauce to provide free hot sauce to students, however word has it that the school now supplies free Sriracha hot sauce at the Street Food Kiosk which is great news.
The group also plans to visit a local restaurant later in the year to see how a professional kitchen works. Watch this space!
